Pua is a Famous old dessert from India. Different state has different versions of pua or Malpua. But, Pua and Malpua are not the same. There’s a slight difference between them, we will know that later.
Let me talk about Pua Recipe First. This Pua Recipe is very popular in Bihar and Jharkhand. It’s made up of just mixing a few ingredients together and deep frying in Hot oil.

Pua In Different States

Pua is not only a sweet in Bihar- Jharkhand but it’s an emotion for many as Pua reminds us of special occasions and festivals.
As I said earlier, different states have different ways of making it- in Bihar- Jharkhand it’s considered among the main desserts in the festival, along with having it in breakfasts.
In some regions of bihar, it is served along with mutton curry.
In Odisha, Malpua/pua is served during the festival called Rojo Parv, or swing festival.
In Nepal, It’s known as Marpa.
Malpua’s / Pua are also prepared during the holy month of Ramadan for Iftars.

Ingredients to make Pua in Bihar-Jharkhand Style

All-purpose flour or wheat flour
2 cups
Ripe Banana2 large
sugar1/2 cup+ 3 tablespoon
Milk or Water1 and a half cups
Finely chopped fresh coconut
Dry fruits
fennel seeds1/2 teaspoon
Green cardamom3 – 4
Pinch of salt.
Oil or Ghee to fry.2 – 3 cups

How to make Pua

  • Firstly, In a bowl mash two ripe bananas.
  • you need to make a perfect batter. Not too runny, not too thick. In a bowl, sift all-purpose flour or wheat flour.
  • Add Milk or water at room temperature in batches
  • Mix the batter with your clean hands or using a whisk.
  • When everything has nicely combined, Add crushed green cardamom or Crushed fennel seeds(add any one of them), dry fruits, Sugar, and a pinch of salt.
  • Pro Tip: Now, cover a lid and keep it aside for 3o mins. This will make your pua more fluffy and soft.
  • Heat oil or Ghee, whatever you prefer.
  • At medium to high flame, Heat it.
  • Once it’s hot, keep the flame at medium and pour the batter using a ladle.
  • Cook it from both sides, splashing the hot oil on the top.
  • Cook until it’s golden.
  • Do the same with the remaining batter.

Difference between pua and malpua

There’s a very slight difference between Malpua and Pua Recipes.
In the pua recipe, we don’t dunk it in sugar syrup but in the Malpua recipe, we dunk it in sugar syrup after frying it out from the oil.
