Chicken biryani is the most delicious Indian cuisine which is the most favorite and loved cuisine of not only Indians but loved all over the country. It’s one of the most royal delicacies.
This is delicious gram masala, saffron, and Gulab Jal flavored rice that is loaded with spicy marinated chicken, layered with the barista (caramelized onions), roasted dry fruits, finely chopped mint, and coriander and basmati rice.
So, in my recipe, I have made it very simple yet delicious. I will also give you the recipe for the complimentary dish of biryani that’s RAITA, which I feel biryani is incomplete without raita. So that you enjoy the best chicken biryani at your home.

Preparation time: 30 minutes.

Cooking time: one hour (for chicken)

Total dum time: 30-45 minutes

Rice cooking time: 10-15 minutes

1. Ingredients

For chicken masala

  • Chicken(500 gms)
  • Vegetable oil
  • Onion
  • Ginger garlic paste
  • Green chilies

Spices

  • chicken masala
  • turmeric
  • red chilly powder
  • coriander powder(dhania powder)
  • cumin powder(jeera powder)
  • biryani masala

For Biryani Masala

  • 2 cinnamon stick
  • 4 black cardamom
  • 6 green cardamom
  • 4 Cloves
  • 1 teaspoon Fennel seeds(sounf)
  • 2 bay leaves
  • 1 tablespoon cumin seeds
  • ½ tablespoon coriander seeds
  • 2 mace
  • 2-star anise
  • 1 teaspoon shahi jeera
  • ½ teaspoon nutmeg
  • 4 dried chilies
  • 1 tablespoon peppercorn
  • take all these ingredients and dry roast them. And put it all into a blender and blend it into a powder without adding water.

For Flavored Rice

  • Long grain aged basmati rice- 1 kg (wash it properly and soak it 15 or 30 minutes before cooking)
  • ½ teaspoon saffron threads
  • Whole spices- 5 green cardamom(choti ilaichi),3 black cardamom(Badi ilaichi),1 cinnamon stick(dalchini), 3 clove(long), 1 bay leaf(tez patta), 1 mace(javitri), ½ teaspoon nutmeg(jayfal), ½ teaspoon shahi jeera, 1 star anise(chakra ful)

For chicken marination

  • Curd
  • Salt to taste
  • Kashmiri red chilly powder
  • Turmeric 
  • Ginger garlic paste
  • Deep-Fried onions(barista)

For garnishing

  • Barista
  • Roasted dry fruits
  • Finely chopped mint and coriander
  • Gulab Jal
  • Kewra water
  • Food color(optional)

2. How to make chicken masala for chicken biryani

Starting from marinating the chicken

  1. Take chicken pieces in a bowl, and wash them properly.
  2. Now add 3 tablespoons of yogurt, salt to salt, Kashmiri red chilly powder, turmeric, ginger-garlic paste, and crushed fried onions.
  3. keep the marination for 30 – 60 minutes.

Making of Chicken


step 1 – Now, take a pot, and add 4 tablespoons of vegetable oil. now add 1 bay leaf, 3 green cardamoms, 2 black cardamoms, 1 cinnamon stick, and 3-4 finely chopped green chilies. Saute it for 1 minute.
Step 2 –when you smell the aroma of whole spices, add marinated chicken into the pot. Saute it for 2-3 minutes and cover it with a lid. Open the lid in intervals and saute it till the chicken get soft.
Step 3 when chicken is cooked at 80%, it’s time to add all the spices mentioned above like chicken masala, and biryani masala.
Step 4 – Mix it with chicken and let it cook for 5-10 minutes.
Step 5 – After 10 minutes, you will see that chickens are perfectly coated with masala, now add a handful of chopped coriander leaves and remove the pot from the gas.

For flavored rice

step 1 – Take a pot, add water as much as needed to cook 1 kg rice, add salt to taste, 3-4 green cardamom, 3 black cardamoms, 1 cinnamon stick, 2 cloves, 1 bay leaf, ½ teaspoon shahi jeera, 1-star anise.

Step 2 –Cover it with a lid. Let it boil.
Step 3 – When you smell the aroma of garam masala, add soaked rice and let it boil for 10 minutes.

Step 4 – Then, strain the water. Make sure that rice is cooked 80%.

Lastly, it’s time to assemble Rice and Chicken to complete the making of chicken Biryani

Step 1 – Take one big pot, add 2 tablespoons of oil, and put all the whole spices used at the time of boiling rice water.
Step 2 – Now, start layering flavored rice, sprinkle 1 teaspoon biryani masala which we have learned above, sprinkle barista, roasted dry fruits, finely chopped mint, and coriander.
Step 3 – Above it layers spicy chicken and repeats the process.
Step 4 – When all the chicken and flavored rice are layered. Add 1 tablespoon kewra water and 1 teaspoon Gulab Jal.
Step 5 – If you want to add color, take any food color, mix it in a half bowl of water and pour it above the layered chicken biryani.
Step 6 – Take a flour dough and stick it to the mouth of the pot and cover the lid tightly.
Step 7 – Finally, it’s ready to keep on dum. On a gas, keep one medium-sized Flat thick Pan or Tawa in low flame, and above that put a chicken biryani pot. Let chicken biryani get dum for 30 minutes.
After 30 minutes, open the lid and serve the chicken biryani with chilled raita.

Recipe of Cucumber Raita

  1. Take a bowl of yogurt.
  2. Whisk it till it gets smooth.
  3. Add salt to taste,
  4.  ½ teaspoon black salt, 
  5. 1 teaspoon cumin powder( take 2 tablespoons cumin seeds, dry roast them, and blend them into dry powder),
  6.  1 teaspoon chat masala, 
  7. a pinch of red chilly powder,
  8.  and finely chopped coriander and mint leaves and one grated cucumber.
  9. Serve chilled.
